Diary Entry: Red Beans on Mondays is a huge part of New Orleans culture. Back in the day Mondays served as a wash day, so homemakers would look to make something easy and filling (like red beans and rice) that they could combine with meat left over from Sunday, typically pork of some kind. From that a New Orleans staple was born.

Most Mondays we've been going down to a dive bar in the 9th Ward called B.J.s where we go and check out a local blues combo called King James and The Special Men. Every Monday, the band leader Jimmy (aka King James!) whips up a huge crock pot of his awesome red beans and rice and makes it available for free to all in attendance. The pot usually doesn't last long before it's empty. This stuff is the shit.

As a tribute to James and his generous (and delicious) offering I decided to do a piece in its honor. Heres' to next Monday...
